Job Description

Essential Functions

  • To help the Chef de Partie/Demi chef de Partie to establish standard recipes and ensure the compliance with them.
  • Constantly inspect taste, temperature and visual appeal, make sure that all dishes are uniform and that established portion sizes are adhered to. To participate in product development and in controlling the smooth operation of the kitchen. To ensure food quality, food taste, food presentation and food requisition.
  • To have a good knowledge of cuisines to carry out the duties and responsibilities for the position in an efficient and productive manner.
  • To ensure proper sanitation procedures are followed and the kitchen is always clean, neat and tidy.
  • To assist the Chef’s in the day-to-day operation of the kitchen and to help maintain a high Standard of food preparation. To have full knowledge of Four Seasons Food Standards.
  • To ensure all equipment is in full working order and an adequate supply of all products prepared on a timely basis.
  • To do requisition of all items needed for the following day from the food storeroom, non-food storeroom and stewarding department. To prepare exciting and appealing room amenity when needed.
  • Able to demonstrate and maintain at all times a professional behavior and positive attitude.
  • Communicate regularly with the Chefs in charge to achieve an excellent rapport throughout the food production department.
  • To respond properly in any hotel emergency or safety situation and able to perform other tasks or projects as assigned by hotel management.
  • Follow the instructions and recommendations from the immediate Superiors to complete the daily tasks
  • Ensure the highest standards and consistent quality in the daily preparation and keep up to date with new recipes and preparation techniques
  • Coordinate and participate with other sections of requirements, cleanliness, wastage and cost control
  • Assist and check on daily bakery requirements, functions, buffets and last minute events with the supervisors and prepare
  • Ensure highest standards of hygiene within the bakery section
  • Prepares food items/ product according to consistent quality following recipe cards, as well as production, portion, and presentation standards; completes mis en place and set-up station for breakfast, lunch, and/or dinner service
  • Starts food items that are prepared ahead of time, making sure not prepare beyond estimated needs
  • Operates, maintains and properly cleans kitchen equipment, including deep fryer, broiler, stove, steamer, food processor, mixer, slicer, oven, steam table, tilt kettle, waffle iron, and flat top grill
  • Dates all food containers and rotates as per policies, making sure that all perishables are kept at proper temperatures; checks pars for shift use, determines necessary preparation, freezer pull and line set up; notes any out-of-stock items or possible shortages; returns all food items not used to designated storage areas, being sure to cover/date all perishables; assists in setting up plans and actions to correct any food cost problems; controls food waste, loss and usage per policies
  • Communicates with guests and employees using a positive and clear speaking voice
  • Listens to understand requests, responds with appropriate actions, and provides accurate information
  • Complies with Four Seasons’ Category One and Category Two Work Rules and Standards of Conduct as set forth in EmPact
  • Works harmoniously and professionally with co-workers and supervisors

Preferred Qualifications And Skills

  • 1-3 years of experience in related field
  • Excellent command in English, Arabic is an advantage
  • Service Passion for Luxury Hospitality and have an eye to details.
